For dinner last night I tried the Pumpkin Seed Pesto recipe from the the Baking and Books blog
. It was simple to make and had great flavor. I followed her recipe pretty close, except I added salt and pepper and more lemon juice. I had it on spaghetti squash as she suggested, but this would also work on whole wheat pasta or bruschetta or as a dip/spread. This recipe is definitely a keeper.
I've been meaning to try that recipe, too!
